Stilton and Asparagus Flan
a Don Schell creation

Ingredients:

Crust:

2 ½ cups all-purpose flour
½ lb. Vegetable shortening
½ cup cold water

Filling:

100 gr. Stilton cheese
1 bunch asparagus tips (cooked & refreshed in cold water)
2 tbsp. minced shallots
3 large eggs
1 ½ cups milk
pinch of salt & pepper

Procedure:

1. To make the crust, cut the shortening into the flour with a pastry knife until it resembles coarse oatmeal, then stir in the cold water. Knead the dough for two to three minutes then refrigerate for 20 minutes before using.

2. Roll out the crust and fit it into an 11" flan ring. Cover the Pastry with parchment paper then fill the flan with dried beans. Bake the crust for 20 minutes at 350 F.

3. Mix the eggs and milk together, add salt and pepper. When the crust has cooled down, remove the beans and paper, then spread the shallots and stilton on the bottom of the flan. Pour the milk and egg mixture into the flan then arrange the asparagus on top of the cheese, milk and eggs.

4. Bake the flan for 40 minutes at 350 F. Serve hot or at room temperature.
