Summer Pudding

a Don Schell creation

Ingredients:

1 pint raspberries
1 pint strawberries (sliced)
1 pint blueberries
1 1/2 cups granulated sugar
1 loaf of day old white bread, crusts removed & sliced

Procedure:

1.) Line a medium-sized bowl, or 9" spring form pan with the sliced bread, leave enough to make a lid.

2.) Wash all the berries & combine with the sugar. With a large spoon coarsley mash the berries to extract some of the juices.

3.) Pour the mashed berries into the bread lined container and cover with the remaining bread. Lay a sheet of plastic wrap over the top, set a plate on top and weight it with about 2 lbs. (a couple of cans works well). Refrigerate for 24 hours.

4.) Turn out onto a plate and cut into wedges. Serve with thick cream.
